Beet Hummus

Beetroot has anti-inflammatory and antioxidant properties, ideal for those who are looking for a healthy lifestyle.

Ingredients:

1 roasted beet peeled and chopped
1 can chickpeas drained
2/3 cup tahini
2-3 zest & juice lemons about 1/3 cup of lemon juice
2 cloves garlic chopped
1/3 cup olive oil
1 teaspoon cumin or more to taste
1 teaspoon salt


Preparation:

Combine the chickpeas, tahini, beet, lemon juice, garlic, cumin, and salt in the bowl of a food processor.
With the motor running, slowly drizzle in the olive oil and blend until smooth.
Taste and adjust seasoning as needed, adding more olive oil, lemon juice, garlic, cumin or salt as needed.
Serve in a bowl and sprinkle parsley, lemon zest, nuts, big salt flakes or swirls of olive oil.
